The tomato is a round red fruit, or berry, from the nightshade family native to South America. 
Despite botanically being a fruit, it’s generally eaten and prepared like a vegetable.

Tomatoes can be used in a wide variety of ways. You can stack, stuff or squash them, preserve them in pickles, jams or sauce, have them in soup, salsa, dip, or a vinaigrette. Candy them, dry them, roast them, eat them fresh in a sandwich or salad.

Store tomatoes vine-side down at room temperature on the bench, to retain the best flavour and texture. Leave the green truss on to help the tomato last longer, and allow them to breathe - do not put in an air-tight container. Storing near apples or bananas will cause the tomatoes to ripen quicker. Refrigeration will stop the ripening process, which causes the tomatoes to have a grainy texture, and lose their flavour.
